I receive many calls a month from people that have uniquely sized &#8220;crannies and nooks&#8221; that they would like to place a wine or beverage cooler in.  A cranny is a small narrow opening in a wall and a nook is defined as any small recess.   Often these areas are old desk knee spaces with a countertop or other areas with previously built-in custom but off-size cabinetry.  The goal is to install and build-in a wine or beverage cooler into the confined space to give it an under counter finished appearance.</p>
<p>Wine and beverage refrigerators, used in built-in applications, with few exceptions come in standard kitchen cabinet size widths, depths and heights.  The most common widths are 15 inches wide or 24 inches wide, although sometimes one can find a product that is 12 or 18 inches wide.  Typical cabinetry depths are 24 inches and heights around 34 inches.  No matter what brand of wine or beverage cooler you might opt for there is a high degree of consistency regarding the dimensions of these under counter products.</p>
<p>If the desire is to place these wine cooler appliances in a confined space, you must also consider how that placement will affect the cooling efficiency of the product.  In order to install one of these appliances in a zero-clearance situation, they must be front-vented, similar to standard upright refrigerators.  The front vent carries the heat given off by the cooling process and allows it to disperse away from the appliance.  If a wine cooler or beverage center is rear vented, as most all free-standing ones are, the heat will build up in the confined space, make the cooling appliance run harder than it was designed for and ultimately &#8220;burn it out&#8221;.</p>
<p>Free standing cooling appliances for wine and beverage cans are designed and built with a broad range of differing widths, depths and heights.  Customers often find one that will fit their particular cranny dimensions and want to use it in a built-in application.  Stand-alone wine and beverage coolers require specified clearances in order to operate efficiently given their rear-vented design.  I usually recommend minimum clearances of at least 3 inches around the sides and top of the appliance and at least 6 inches for the rear-vented back.  If these clearances aren&#8217;t accommodated when installing a free standing unit, the unit will most surely fail before it&#8217;s time.</p>
<p>One customer had a cabinetry nook that was ideally 24 inches wide and 24 inches deep but was short by a half an inch on the height.  The customer called me and after hearing about the height deficiency and the specific design characteristics, I found an easy solution, remove the ceramic tile from the floor of the nook to gain the needed height for the built-in cooler she wanted to purchase.  Additionally, some under counter wine coolers have adjustable legs that can be dialed into the proper height needed.</p>
<p>The dilemma of trying to retro fit a pre-sized purchased product into a nook or cranny to enhance the appearance of your home and business needs a cautioned approach.  Putting the wrong appliance in a place where it can&#8217;t function properly is begging for failure.  I believe the best approach, to cranny or nook remodeling to incorporate a wine or beverage refrigerator, would be to remove the cranny&#8217;s restricted construction and start with new appropriate sized cabinetry that will give you the finished look that will enhance the decor of your home.   You won&#8217;t regret the extra expense for assuring success.

Champagne &#8211; for many of us just the very mention of the word conjures uppictures of glamour, style and romance.</p>
<p>Lots of people believe that there are just a handful of famous champagne brands, but in reality there are just short of 5,000 different champagne makers. They&#8217;re all unique in their way and many of them create superb wine that match better known champagnes, but faced with such a wide selection, how to you decide on one or another? Here are some simple hints to help you make the right decision for you.</p>
<p>There are four things that influence the quality and style of a champagne and that need to find out about before you choose a champagne:<br />
&#8221;	What grapes were used and how were they blended together?<br />
&#8221;	What was the quality of the grapes used?<br />
&#8221;	How long has the champagne been aged?<br />
&#8221;	How sweet is it?</p>
<p>The answers to some of these questions can be found on the label. To get the rest of the info. you&#8217;ll have to ask the people in the shop &#8211; if they&#8217;re good they should be able to tell you. If they don&#8217;t know go to another shop!</p>
<p>Grapes<br />
Champagne can be made with 3 grape varieties: one white, Chardonnay, and two black, Pinot Noir and Pinot Meunier. The grapes can be blended together in whatever ratio the wine maker decides, but this choice makes a big difference to the end result.</p>
<p>It&#8217;s common to write about grapes in terms of smells and tastes, but for many folk it&#8217;s more natural to think of them as colours in an artist&#8217;s paint box or instruments in an orchestra. When you mix colours and sounds together you often create a finished product that is more than just the sum of the parts.</p>
<p>Chardonnay:  usually light in style ( this doesn&#8217;t mean lacking in flavour ). It&#8217;s sometimes described as &#8216; elegant&#8217;, or &#8216;feminine&#8217; and is characterised by flavours and aromas of citrus fruit and floral notes such as blossom.</p>
<p>If Chardonnay were a colour it would be bright yellow or dazzling white. It contributes the high notes of the music just like the flute or violin of the orchestra.</p>
<p>Pinot Noir: brings more body and fullness to the champagne together with flavours and aromas of red fruits such as cherry, blackcurrant and strawberry.</p>
<p>Pinot Meunier: adds aromas of apples and pears together with a fresh fruity quality that makes a champagne easy to drink and soft in the mouth.</p>
<p>These two black grapes are the bass notes &#8211; the trombones and drums of the orchestra, or the rich reds, blues and greens of the artist.</p>
<p>Quality<br />
For a good chef there&#8217;s one golden rule: to make a great dish you must start with great ingredients &#8211; it&#8217;s the same with the grapes in champagne.</p>
<p>There are 3 grades of quality:<br />
The top 5 % of the vineyards are called Grand Cru ( you&#8217;ll see this on the label if it applies )<br />
The next 15% are designated as Premier Cru ( also on the label)<br />
The rest are ranked as Cru ( if you don&#8217;t see Grand or Premier Cru on the label, then the blend is an ordinary Cru )</p>
<p>When different grades of quality are mixed together the quality of the overall blend is determined by the  lowest quality element, and it doesn&#8217;t matter if there&#8217;s only a tiny fraction of that lower quality ingredient. So, a blend of 98% Grand Cru, 1% Premier Cru and  1% Cru, is not entitled to be called either Grand Cru or Premier Cru. It all has to be called just plain Cru</p>
<p> Ageing<br />
You almost never find this mentioned on the label but in fact it&#8217;s one of most important factors determining quality.</p>
<p>The critical thing is the time the champagne spends ageing on the lees ( yeast sediment ) in the cellar in France before it is sold.</p>
<p>According to the regulations 15 months is the legal minimum ageing on lees for a champagne. In practice this is hardly long enough for the round rich flavours to evolve and for the champagne to loose it&#8217;s young, sharp edge.</p>
<p>In real terms 2.5 years, or 3 is what&#8217;s needed and if you come across a champagne that is aged even longer, then that&#8217;s terrific.</p>
<p>Don&#8217;t forget  this is different from the time you hang on to the bottle once you have bought it and the wisest thing, unless you have a superb cellar in your home, is to drink the champagne within a year or two at most after you buy it.</p>
<p>Sweetness<br />
By the end of the champagne making process the champagne in the bottle is bone dry &#8211; too dry for most people&#8217;s palate &#8211; so a few centilitres of liquid sugar is mixed in to make the champagne more acceptable to the consumer&#8217;s expectations. If you add more sugar you get a sweeter champagne.</p>
<p>According to how sweet a tooth you have, what the occasion is and what food you may be eating with the champagne, you&#8217;ll need a champagne with a different amount of sweetness. Fortunately this is one piece of information that  is always indicated on the label if you know what to look for.</p>
<p>Almost all champagne these days is fairly dry &#8211; this style is called Brut and you&#8217;ll find this word if you look on the label</p>
<p>If you like something sweeter, look for the words Demi-Sec on the label.</p>
<p>On the other hand if a really dry champagne is the one you love then you should look for the words Extra Brut or Brut Nature.

Ask 50 champagne lovers this question and you&#8217;re bound to get lots of different replies, but the chances are that a few recognised names will crop up more than most: Dom Pérignon, Cristal, Krug, La Grande Dame will probably be mentioned a lot.</p>
<p>But how would it be if none of these is the most glamourous champagne brand and how on earth do you select one?</p>
<p>In one sense it&#8217;s impossible because it&#8217;s a very subjective opinion, but if there were a way of singling out just one, what would be the determining factor that no one could argue about?</p>
<p>Well it couldn&#8217;t be the price tag because that changes from one bar to another. and it couldn&#8217;t be the taste because we all have different likes and dislikes. No, what we&#8217;re looking for is something tangible that no one can haggle about.</p>
<p>Well, you might look to see which the oldest champagne house is. After all we often associate great age and a rich history with things that are the best of the best so perhaps we should take a look and anyway, it will give you a new insight into the whole business of champagne brands.</p>
<p>In most parts of the world and the majority of industries it&#8217;s rare to find companies that were founded over 200 years ago and are still trading , but in Champagne there&#8217;s a positive flood of them &#8211; well, alright a handful then, but that&#8217;s still impressive.</p>
<p>Here are a few of them &#8211; the names may not all be familiar to you&#8230;</p>
<p>The most ancient champagne house of all is Ruinart &#8211;  La Plus Ancienne Maison de Champagne &#8211; it was created back in 1729.</p>
<p> Ruinart also has some of the most spectacular cellars too. They go way back to Roman times and in fact Ruinart&#8217;s cellars are the only ones that are classifed as a national treasure. Right now you can&#8217;t visit because of restoration, but when you next find yourself in Reims a visit to Ruinart is a must.</p>
<p>Gosset  is also a very venerable company dating back to 1584. Hang on&#8230;. doesn&#8217;t that make it older than Ruinart?</p>
<p>Well yes, but the thing is that Gosset started life as a wine trader and even thoughwe know they sold still wine, there are no records to show that Gosset made champagne all that time ago.</p>
<p>So Gosset always takes care to call itself as the Oldest Wine House in the Champagne Region &#8216; La plus Ancienne Maison de Vins de la Champagne&#8217;</p>
<p>By the way, when speaking of champagne in French, Le champagne refers to the wine made in that region; La Champagne means the region itself.</p>
<p>The largest champagne house of them all is Moët &amp; Chandon.</p>
<p>La Grande Maison, as it is sometimes known, was established in 1743 by Claude Moët (pronouncd with the T sounded, like MO ETTE).</p>
<p>There are no records to show that Monsieur Moët was a champagne maker before 1743 but by that time he was already in his forties so, who knows? He may well have started his company a few years earlier.</p>
<p>Another venerable house with roots going back to the 18th century is Louis Roederer founded in 1776 a date with which every American  will be familiar</p>
<p> It&#8217;s Roederer that makes Cristal which was originally created for Tsar Alexander II of Russia back in 1876 , mind you back then it was a sweet champage quite different from the Cristal we know these days.</p>
<p>Relative new-comers by champagne standards, but still names with a noble story to tell are</p>
<p>Lanson				Founded in	1760<br />
Veuve Clicqout Ponsardin			1772<br />
Piper Heidsieck				1785<br />
Perrier Jouët					1811<br />
Laurent Perrier				1812<br />
Billecart Salmon				1818</p>
<p>It somehow adds an extra touch of magic to realise that there&#8217;s more than a little bit of history in every mouthful of champagne you enjoy.</p>
<p>But if history is the main source of glamour what about some of the smaller champagne brands?</p>
<p>Many of the the less well-known families that still make fabulous today have been anchored in the Champagne region for centuries too.</p>
<p>Champagne Henri Giraud&#8217;s family can trace its roots back to 1625 when François Hémart settled in the village of Aÿ. The Girauds later married into the Hémart family to create today&#8217;s champagne house.</p>
<p>Another champagne brand you may not have seen is Chanoine. Today it is part of a very large group of champagne producers, but it started in 1730 which makes it the second oldest of the lot.</p>
<p>Yet another, Louis de Sacy, boasts that its family was established as vine growers in the village of Verzy as long ago as 1633</p>
<p>The fact of the matter is that when it comes to pedigree some of the smaller houses have an equally proud history as the giant champagne brands and are well worth getting to know when you have the chance.</p>
<p>It just goes to show that there are other things worth taking into consideration when it comes to champagne apart from just the price and the advertising.

Different interpretations of Greek cookery is currently enjoyed by many, particularly since more people are now aware about Greek food, a phenomenon that was launched due to the ever-increasing fame of Greece as a tourist destination and the growing trend of using gastronomy to market a destination. <p>Traditional Greek fare involves the use of olive oil, vegetables and meat, such as lamb.
